What to do with leftover Thanksgiving turkey!

What to do with leftover turkey! When we start thinking about Thanksgiving, the big focus is on the perfect Thanksgiving feast. What about the day after? What do you have planned to eat the next day? Many of us still have family in town and a lot of leftover turkey! These delightful, single serving, turkey cups would make a great addition to a afternoon lunch.

6 slices white bread, crusts trimmed

2 Tbl. melted butter, divided

¼ c. slivered almonds

4 Tbl. butter

2 Tbl. flour

Dash black pepper

1 tsp. salt

1/8 tsp. paprika

1 ½ c. half and half or evaporated milk

1 egg yolk, beaten

2 c. diced cooked turkey

1 ½ c. seedless grapes, halved

To make toast cups, brush trimmed bread slices lightly on one side with part of the melted butter. Gently push each slice, buttered side down, into large muffin tins. Leaving the corners showing at top. Bake at 375° for 8-10 minutes or until corners are browned. Remove from oven; let cool in muffin tins. To prepare filling, sauté almonds in remaining melted mutter (about 2 teaspoons) until light golden brown; set aside. In heavy saucepan, melt butter. Next add flour, pepper, salt and paprika, stirring until smooth. Slowly add half and half/milk. Pour a small amount of sauce over beaten egg yolk, stirring to blend. Return yolk mixture to remaining sauce. Cook and stir until thick. Add turkey and grapes. Heat. Spoon into toast cups. Garnish with reserved almonds.
