Sometimes its fun to change up the way dishes are served, I like kabobs cause they can be served individually. The pepper colors can be changed or added for more variety. The pineapple adds just the right amount of sweet to these Sweet and Sour Pork Kabobs!
Sweet and Sour Pork Kabobs
2 medium carrots, cut into 1-inch pieces
1 can (8 oz.) pineapple chunks, in juice
1 Tbl. vegetable oil
1 garlic clove, minced
¼ c. vinegar
1 Tbl. soy sauce
1 tsp. sugar
¾ pound boneless pork, cut into 1-inch cubes
1 red pepper, cut into 1-inch pieces
1 yellow pepper, cut into 1-inch pieces
Cook carrots in boiling water for about 5 minutes; drain well. Drain pineapple and set aside, reserving ¼ cup juice. Combine pineapple juice, oil, garlic, vinegar, soy sauce and sugar. Pour over cubed pork; let stand for 30 minutes. On four skewers, alternate pork, carrots, red and yellow pepper and pineapple. Grill kabobs for 12 minutes, turning once. Baste often with marinade/sauce. Serve with rice
– Kabobs can also be places on a baking sheet and broiled on high for 12 minutes, turning once.
