Winter is saying goodbye… finally! The Browns are at the end of our Florida with only 2 weeks left before we head north. Strawberry season is in full bloom down here and I have been having my share! Warmer weather calls for lighter dishes and fresh ingredients. This is my “go to” salad when the meal calls for a healthy starter.
Strawberry Spinach Salad and Homemade Dressing
1 Tbl. olive oil
2 tsp. vinegar
½ tsp. cinnamon
1 tsp. lemon juice, fresh squeezed
1 Tbl. honey
1 bunch spinach
¼ c. green onion, sliced
1 pint strawberries, sliced
Wash and cut off the spinach leaves. Toss in onion and strawberries. Mix remaining ingredients together and pour over the spinach leaves. Serve right away.
