There are still a few weeks of summer. Still some fresh garden produce hanging around! All of our lives are a little fuller this time of year, so meal time calls for pure and simple! At the cooking school I did at our county fair I had some extra time at the end so I added this quick, easy recipe for Parmesan Roasted Green Beans. Which really could be Parmesan Roasted “any veggie”!! I make it all the time during the summer, I have a smaller roasting pan, and will add a variety of fresh veggies and seasonings.
I do change it up a little as far as the roasting time goes. This recipes calls for roasting it for 15 to 20 minutes, if I want the veggies quick, I turn on the broiler on high and roast 4 minutes, then flip the veggies and roast for 4 more minutes. They turn out golden and crispy!
Parmesan Roasted Green Beans
1 ½ pounds fresh green beans
2 Tbl. olive oil
½ tsp. salt
¼ tsp. freshly ground pepper
½ c. grated Parmesan cheese
Arrange the green beans in a single layer in a shallow 11x13inch roasting pan. Drizzle with olive oil. Season with the salt and pepper. Roast at 400° for 15 to 20 minutes or until tender. Sprinkle the green beans with Parmesan cheese and roast for 1 minute longer or until the cheese is melted.
