Orange Whole Wheat Pancakes

We have all heard many times that breakfast is the most important meal of the day. Most of us just have time for a quick bowl of cereal or a breakfast smoothie, but we all enjoy those days when we can make something a little extra special!

I have been swapping out white flour with whole wheat flour in quite a few recipes these days to make them more healthy. It makes the batter a bit heavier in some cases but I have been loving the results.

These pancakes are a mixture of everything, healthy, hearty, flavorful, and delicious! The batter is an easy one to mix up and is a nice change from the everyday pancake.

 

Orange Whole Wheat Pancakes

2 eggs, room temperature

1 tsp. vanilla extract

½ tsp. almond extract

1 ½ c. orange juice

¼ c. vegetable oil

2 c. whole wheat flour

½ tsp. baking soda

½ tsp. salt

Beat eggs with extracts. Mix in orange juice and oil; set aside. In a separate bowl, mix flour, baking soda and salt. Add liquid mixture to dry ingredients, stirring just enough to mix. Cook on griddle over medium heat. Enjoy with pure maple syrup and thinly sliced orange slices.
