Orange Spinach Salad

When summer comes into view I start craving those fresh ingredients that are growing in our gardens and filling the tables at the farmers markets!

Orange Spinach Salad with Vinaigrette Dressing

 

Fresh spinach leaves, washed, drained on paper towels and chilled

2 oranges, peeled and sliced into ½ inch slices

 

Vinaigrette Dressing:

3 Tbl. vegetable oil

1 Tbl. white vinegar

½ tsp. sugar

1 tsp. lemon juice

¼ tsp. dry mustard

¼ tsp. salt

1/8 tsp. pepper

 

Place spinach leaves on individual plates (or in a large salad bowl to save time). Garnish with orange slices. Combine all vinaigrette ingredients together in covered container and mix well. Top with dressing immediately before serving.
