Old Fashioned Peach Pie

Peach pie

Last week our local chapter of Youth For Christ was having their annual peach fundraiser. They are in the process of remodeling a new youth building for the use in our community!! Pies I asked my sister in law if she would like to make peach pies with me to freeze for the upcoming holiday seasons and family get-togethers. (she even let us make the mess at her new house 🙂 ) So, we set to work peeling 2 cartons of peaches and made a total of 14 pies! Slice of Peach PieThe best part about it for me though…. Is the recipe is my Grandma Browns! Hers will always be my favorite pies and my love for making pies the old fashioned way came from her! She has now passed the pie making on to my Aunts and us grandkids…. But I look forward to enjoying them with her this Thanksgiving!

Old Fashioned Peach Pie

Crust:

2 c. flour

1 tsp. salt

2/3 c. lard

5-6 Tbl. ice cold water

Filling:

6 c. fresh peaches

¼ tsp tapioca

1 c. sugar

1 tsp. almond extract

Peel, core and slice the peaches. In a large bowl combine the sliced peaches, tapioca, sugar and almond flavoring, mix well, let stand for 15 minutes. Set aside.  Place flour, salt, and lard in food processor. Pulse a few times and then start to add ice water one tablespoon at a time. Pulse together until dough resembles small pea size pieces. Remove dough and separate into 2 balls. Roll out 2 pie shells for a 9 inch pie plate. Press one pie shell into the pie plate. Pour peach mixture into the pie shell. Cut the second pie shell into long strips and weave a lattice top crust. Flute the edges. Brush the crust with a beaten egg or milk, and lightly sprinkle with sugar. Preheat oven to 400°. Bake for 40-45 minutes.
