Morning Gloria Muffins

Last weekend The Browns, my families singing group, sang at Gloria Gaither’s Fall Festival in Alexandria, IN. The weekend festival was held at Gaither Family Resources and was filled with fabulous food, tours, exhibits and lots of great gospel music! Guests could wander the grounds and enjoy the beautiful, crisp Indiana weather, or stop into the bookstore, which is one of my favorites in the country!Gloria Gaither / The Browns I told my sister-in-law, Jen, “you could browse through it 5 times and sill see something new every time!”.    You can pick up music from your favorite Homecoming Artists too! When you need to get off your feet for a while, you could grab a hand scooped ice cream cone from their new ice cream counter.  You might prefer a rich latte’ from their coffee shop paired with a Morning Gloria Muffin while you sit and read the book you just picked up! These muffins are one of my favorites, I made Gloria’s recipe a few years ago when I gave a cooking demonstration at the festival. So when I was looking back over the weekend I thought I would share my own version with you! They are full of fall flavors!

 

Morning Gloria Muffins

2 c. all-purpose flour

1-¼ c. sugar

2 tsp. baking soda

2 tsp. cinnamon

½ tsp salt

2 c. grated carrots

½ c. raisins

½ c. shredded coconut

½ c. chopped pecans

3 eggs

1 c. vegetable oil

1 apple, cored and shredded

2 tsp. vanilla

 

In a large mixing bowl, combine flour, sugar, baking soda, cinnamon and salt. Stir in carrots, raisins, coconut and pecans. In a separate bowl, combine eggs, oil apple and vanilla. Add to flour mixture. Stir only until combined. Spoon into greased or lined muffin tins. Bake at 350° for 15-18 minutes.
