Lime and Dill Marinated Chicken

I love marinaded chicken, especially in the summer. Chicken is a staple on my grill. I have it A LOT! Therefore it can become mundane, so the marinade is where I get creative to change up the flavors! Let it sit overnight in a plastic bag or a dish covered with plastic wrap. I will admit that many times I forget to prepare it the night before, so I leave it for 15-20 minutes! But what works for you will be just fine!

I found that lime and dill go nicely together in this simple marinade and with the addition of the buttered noodles it makes a great summer dish!

 

 Lime and Dill Marinated Chicken

4 chicken breasts, deboned and halved

Marinade:

¼ c. lime juice

¼ tsp. salt

1/8 tsp. pepper

½ tsp. dried dill weed

½ tsp. dried minced onion

2 Tbl. melted butter

 

Combine all marinade ingredients in heavy zip-lock plastic bag; mix. Add chicken breasts; seal bag. Turn to coat chicken with marinade; let stand at room temperature for 10-15 minutes. Meanwhile, pre-heat the grill. Place chicken breasts over medium coals or low setting on gas grill. Cover grill; grill for 5 minutes on each side. Baste with butter after turning. Serve with hot buttered noodles.

Mic-Tip

 

  • Always rinse raw poultry thoroughly inside and out under cold running water.
  • When cutting raw poultry, use a plastic or ceramic surface (one that can be washed in the dishwasher or else scrubbed in hot, soapy water and chlorine bleach).
  • Wash knives and surfaces that come in contact with raw poultry with a bleach-based detergent. Use disposable paper towels to wipe up poultry juices.
