Lemon Yogurt Muffins

When I was little I don’t think I could have imagined someday eating and liking plain Greek yogurt, can you? I liked the sweet and smooth flavors of strawberry, key lime, peach, etc. Now that I’m older and have learned the benefits of plain yogurt, I have acquired a taste for the ordinary and other fancy flavors are simply too sweet! I also love the health benefits, so I put yogurt in a lot of things now… like these Lemon Yogurt Muffins!
I even have a little confession to make! Once I made this recipe and forgot to add the egg!! But it turned out just fine, not as light, but they were still really good and no one else noticed either…… until I told them a little while later!! We all had a good laugh.

Lemon Yogurt Muffins

2 c. flour
1 tsp. baking powder
1 tsp. baking soda
¼ tsp. salt
¼ cup sugar
2 Tbl. honey
2 eggs
1 ¼ c. plain Greek yogurt, room temperature
¼ c. melted butter
1 Tbl. grated lemon peel

Lemon Syrup
1/3 c. lemon juice
1/3 c. sugar
3 Tbl. water

Combine flour, baking powder, soda and salt; set aside. In another bowl, combine sugar, honey, eggs, yogurt, butter and rind. Add dry ingredients; mix until combined. Spoon into greased muffin tins, or muffin cups. Bake at 375° for 15 minutes. To make syrup, combine ingredients in a saucepan; boil 1 minute. Drizzle syrup over warm muffins.
