Grilling season is my favorite! Most of the summer I am standing at a grill when it comes to mealtime. Most of the time its pretty basic but every now and then I see something in a restaurant and want to try it at home. That’s exactly what I did here. It is a bit different since I changed things to what I would enjoy more, but that was part of the fun! I hope you’ll have a chance to enjoy this on one of these beautiful summer nights!
Grilled Mushroom & Swiss Chicken
6 chicken breasts
2 c. mushrooms, sliced
2 Tbl. butter
6 slices Swiss cheese
Salt and pepper to taste
Preheat the grill. Wash and slice mushrooms. Place in foil wrap and dot with butter. Season with salt and pepper. Close the foil and place on the grill. Season the chicken breasts with salt and pepper and place on the grill. Cook 6-8 minutes on each side depending on thickness. When chicken breasts are done, place a spoonful of mushrooms on each piece of chicken. Cover with slices of Swiss cheese, close the lid and grill till the cheese is soft and beginning to melt. Remove from heat and serve at once.
