This French Peas recipe would be a lovely addition to your summer dinner gatherings. It’s colorful and a welcome variation to your normal green pea side dish!
2 green onions, diced
1 c lettuce, finely shredded
1 Tbl. vegetable oil
1 tsp. all-purpose flour
¼ c water
1 – 10 oz. package frozen or fresh peas, cooked
1 – 8 oz. can water chestnuts, drained
Dash of black pepper
In a saucepan, cook onion and lettuce in oil over low heat for 5 minutes. Set aside. Combine flour with water; add to onion mixture and cook, stirring, until thickened. Add peas, water chestnuts and pepper. Heat through and serve.
