Durango Chicken Wings

Today is the 2nd week of the NFL playoffs! Did your favorite team make it through to this round? My Dad was a football player in high school and college. My whole family loves sports of all kinds so the playoffs are always a great family time for us. While the day may be about football, food is always right behind. Today I made Durango Chicken Wings that will give just the kick this weekend needs! Oven baked then dipped in a cool Cucumber Cumin Dip these little wings will be gone before you take a second look!

 

Durango Chicken Wings

½ c. butter

1 Tbl. ground cumin

2 tsp. ground red pepper

1 tsp. paprika

4 lb. chicken wings

 

Cucumber Cumin Dip:

8 oz. cream cheese

½ c. cucumber; peeled, seeded & chopped

1 Tbl. instant minced onion

1 tsp. ground cumin

1 tsp. salt

 

Preheat oven to 425°. Spray 2 large broiling pans with a rack with nonstick cooking spray. Prepare chicken wings by cutting off tips of wings and cutting wings into 2 parts. Place wing sections on prepared pans. Bake until brown on one side, about 40 minutes. Turn, bake until brown, about 10 minutes. Meanwhile, melt butter in small saucepan; add spices. Brush this mixture on both sides of browned wings. Bake until crisp, about 3 minutes longer. Serve with Cucumber-Cumin Dip.

 

Cucumber-Cumin Dip: Mix all dip ingredients in a small bowl. Serve with wings
