When I walk/run on our country road in the spring, I am on the lookout for the asparagus that grows in our ditches! This year, either someone got to it first or I just didn’t look hard enough!! But I still love the healthy green…. even if I had to buy mine at the store this year! Most of the time I simply steam my asparagus with a little sea salt and pepper. This is a nice way to change things up a bit and give it some extra crunch!
1 bundle fresh asparagus spears
4 Tbl. vegetable oil
½ tsp. salt
½ tsp. pepper
½ tsp. oregano
All seasonings can be adjusted to taste
Slice asparagus diagonally into ½ – 1 inch lengths. Place oil in frying pan and heat slightly. Add asparagus, and seasonings to pan. Cover and shake over medium heat until asparagus are crispy, about 7 minutes.
