Coffee Can Bread

My little brother, Andrew, has been asking me when I’m going to make some homemade bread. So, since I love my little brother, I made this fun and  easy Cheddar Cheese Coffee Can Bread! This time I used two 40 oz. sweet potato cans because I made a casserole that day as well. Feel free to get creative, use 3 smaller cans and give away the other 2 for gifts! They are easy to cover and carry around!

Coffee Can Bread

3 c. all-purpose flour, divided

1 pkg. active dry yeast

½ c. milk

½ c. water

½ c. vegetable oil

¼ c. sugar

1 tsp. salt

2 eggs, beaten

1 c. shredded cheddar cheese

Combine 1-½ cups flour with the yeast. Heat milk, water, oil, sugar, and salt until warm, stirring to blend; add to flour mixture along with eggs and cheese. Beat with an electric mixer or by hand until the batter is smooth. Using a spoon, mix in the remaining flour (batter will be stiff). Divide batter and spoon into two well-greased 1-lb coffee cans. Cover with plastic lids. Let rise in a warm place until batter is about ¼ – ½ in. below plastic lids, about 45-60 minutes. Remove lids and bake at 375° for 30-35 minutes. Cool for 15 minutes in cans before removing. Cool on wire rack.

Mic-Tip

– Other cans can be used… I used two 40oz. sweet potato cans. Covered with plastic wrap and a rubber band for a lid!
