Chocolate and Pearls Cupcakes

“Pink and Pearls” was the theme of a little bridal shower some friends and I threw for my soon-to-be sister, Jennifer. Table coverings of delicate lace, soft pink accents and pearls streamed throughout. When thinking about the theme I wanted to make the dessert a part of the soft decor, and also something special to eat! For a party of girls something special means… chocolate and butter cream frosting! With light pink sugar pearls to top off each little cake.

Chocolate and Pearls Cupcakes

2 c. sugar
1 c. shorting
2 eggs, beaten
1 c. sour cream
2 ½ c. flour
1 tsp. vanilla
½ c. cocoa
2 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1 c. boiling water
With an electric mixer, mix ingredients in the order they are listed. Line muffin tin pan with cups and fill 2/3 full with batter. Bake at 350° for 20 minutes or until a toothpick inserted comes out clean. Cool completely. Frost each cupcake with butter cream frosting. Sprinkle candy pearls on top.
