Chicken with French Salsa


The tangy flavor of French dressing has always been my favorite! Yes, even over the most popular…. Ranch! This chicken dish adds a mixture of fresh veggies to make a warm salsa covering chicken breasts cooked in French dressing!

Chicken with French Salsa

½ c. French dressing (can use fat free)

4 chicken breasts, boned and skinned

1 c. onion, chopped

½ c. green bell pepper, chopped

1 Tbl. brown sugar

2 Tbl. fresh parsley, chopped

2 c. tomato, diced

½ tsp. mustard Place

¼ cup French dressing in a small, flat dish.

Coat chicken pieces in dressing. Place chicken in a large skillet sprayed with butter-flavored cooking spray. Drizzle any remaining dressing from dish over top of chicken pieces. Cook about 5 to 6 minutes on each side or until chicken is tender. Meanwhile, in another large skillet sprayed with butter flavored spray, sauté onion and green pepper until tender, about 5 minutes. Add remaining ¼ cup dressing, mustard, brown sugar, and parsley. Lower heat and simmer until chicken is browned. Just before serving, add diced tomato to onion mixture. Cook 2 to 3 minutes, stirring occasionally or until tomatoes are just heated. For each serving, place a chicken piece on plate and spoon a full ½ cup vegetable mixture over top.
