Cherry Chip Cornflake Cookies

Cherry chips, crunchy cornflakes together in a buttery, almond cookie! Perfect for your Easter get together. Cherry chips may not be sold in all stores, all year round. I found them at the larger stores in the springtime during the Valentines Day and Easter Holidays. I love the color and flavor variety they add, so I bought a couple of bags and will put one away for a later date!

Cherry Chip Cornflake Cookies

2 ¼ c. all-purpose flour, sifted

1/8 tsp. salt

1 c. butter, softened

½ c. sugar

1 egg

1 tsp. almond flavoring

3/4 c. cornflakes

1 c. cherry chips

 

Preheat oven to 375°. In a small bowl sift flour and salt together, set aside. In a large bowl, cream butter and sugar until light and fluffy. Mix in egg and almond flavoring. Add flour and mix till smooth. Stir in cornflakes and cherry chips. Roll into one-inch balls placing onto ungreased cookie sheets. Press with fork and sprinkle with sugar, if desired. Bake at 375° for 12 – 15 minutes.
