Depending on what part of our great country you are in, the weather this time of year can be quite chilly! What better time to make some special sweet treats for friends and family. These little sandwich cookies are a delight to put together and have such a rich, buttery flavor.
Caramel Crème Sandwich Cookies
¾ c. brown sugar
1 c. butter, softened
1 egg yolk
2 c. whole wheat flour
Cream the sugar and butter. Add the egg yolk and flour to make a stiff dough. Shape into balls, flatten and bake at 325° for 12 minutes.
Icing: Brown 2 Tbl. butter in a saucepan. Remove from heat and add 1 ½ c. powdered sugar, ½ tsp. vanilla and 4 Tbl. cream. Wisk until all lumps are gone and icing is smooth. More powdered sugar can be added to make a thicker icing.
Make sandwich cookies by spreading icing between two cookies. I like to make them small and dainty!
