Black & White Cupcakes

Cupcakes have sure hit the scene in full force over the past few years! How fun for everyone to get their own, perfect size, little cake. Some eat it in many bites, some just a few and some will just pop the whole thing in their mouth and eat it in one big bite!! These Black & White Cupcakes are rich and chocolaty with a lovely contrast of a cream cheese mixture! 

Filling:

1 – 8oz pkg. cream cheese (or 1 c. Greek Yogurt)

1/3 c. sugar

1 egg

1/8 tsp. salt

1 c. semisweet chocolate chips

 

Cupcakes:

1 ½ c. all- purpose flour

¼ c. unsweetened cocoa

½ tsp. salt

1 c. sugar

1 tsp. baking soda

1 egg

1 c. water

1 Tbl. white vinegar

1/3 c. vegetable oil

1 tsp. vanilla

 

Combine cream cheese, sugar, egg and salt in a mixing bowl; bled until smooth. Stir in chocolate chips. Set aside. Sift together flour, cocoa, salt sugar and vanilla; beat until well combined. Fill paper lined muffin tins half full with chocolate batter. Drop a heaping teaspoon of filling in center of batter of each cupcake. Bake at 350° for 25 minutes. Cool. Refrigerate any leftovers.
