Baked Stuffed Tomaotes

Farmers Market’s are in full swing by this time of summer, and tomatoes are always one of the hot commodities at our local markets. With so many varieties and recipes out there, the choices are endless for how you can prepare them for your next meal! Here is a simple, super tasty and lovely dish for your mid July meal!

Baked Stuffed Tomatoes

6 medium tomatoes

Stuffing:
1 c. garlic/cheese croutons, crushed
2 Tbl. grated Parmesan cheese
2 Tbl. shredded cheddar cheese
4 Tbl. butter, melted
½ tsp salt
¼ tsp. freshly ground pepper
dried parsley
Hollow out a funnel- shaped hole in each tomato to make room for stuffing. Mix stuffing ingredients except parsley, which is sprinkled on top. Spoon stuffing into tomatoes. Place tomatoes in baking dish; sprinkle with parsley. Cover with aluminum foil to prevent over browning of stuffing. Bake at 350° for 30 minutes, or cook on grill until done.
