Baked Squash with Sausage or “squish” as my dad calls it! Has a unique twist with a hot sausage paired with the sweet syrup. During the cool fall months in Iowa I love warming up the oven to back a little acorn squash. The center acts as a bowl and a variety of ingredients can be added to the middle and baked to perfection!
The hot sausage in this recipe, is hot! So if you’re cooking for company or kids who don’t like it spicy it can be mixed with regular sausage to tone down the spice, or can be swapped out for a milder sausage all together. Either way, it will be delicious as a side dish, breakfast, or night lunch!
Baked Squash with Sausage
2 small acorn squash
4 Tbl. pure maple syrup
2 Tbl. butter
8 oz. hot Italian sausage
Preheat oven to 350°. Cut squash in half; clean seeds from cavity. Put a fourth of maple syrup, butter and sausage in each cavity. Bake fro 30-40 minutes or until tender.
