Baked Cod with Cream

On a trip to Denmark last spring, I had the pleasure to try a whole menu! The food was so fresh, with lots of fish, their famous open sandwiches that are prepared in the most beautiful, tasteful ways, and of course their Danish Pastries! Baked Cod with Cream is enjoyed throughout the year but is traditionally served on New Year’s Eve.

Baked Cod with Cream
3 lb. Cod steaks
1 tsp. sea salt
1 egg, beaten
½ c. breadcrumbs, finely chopped
3 Tbl. butter, cut into small pieces
½ pint heavy whipping cream
8 lemon wedges, to garnish

Preheat the oven to 375°. Pat the fish steaks dry and rub the salt over the skin. Place in a lightly greased baking dish, brush with egg, sprinkle with breadcrumbs and dot with butter. Pour cream around the cod. Bake the fish for about 15-20 minutes, depending on thickness, until the topping is browned and the flesh flakes easily with a fork. Serve with lemon wedges.
